Are all Caviar from Russia?

Russia does not export caviar at all. Where you hear about Russian Caviar, what it means is that it is Caviar from the "Russian Sturgeon", which is Oscietra (acipenser gueldenstaedtii). Russian Sturgeon does not mean it was farmed in Russia, it’s just the common name of the species. Just like a dog French Bulldog was not necessarily born in France.


You might be surprised to know that among all the caviar business worldwide, these are the top 3 caviar producing/exporting countries:

  1. China

  2. Italy

  3. France

Russia, as a matter of fact, buys caviar from other countries because their consumption is higher that their production capacity. It seems that Russians eat… Italian caviar ! Look at this very interesting article from Vice.
